未来味觉食验室坐落于北京是朝阳区高碑店,是象上汇集团的第一个独立餐饮品牌。“未来味觉”定位于对美食的研发与探索,给人们带来新的味觉体验。于是,如何感受美食的研发过程及成果,是未来味觉空间设计的主要思考方向。
Taste laboratory is located in Gaobeidian, Chaoyang District, Beijing, and is the first independent catering brand of Xiangshanghui Hotel Group. Taste laboratory is designed as a food lab that leading people to find a new taste experience of foods.

未来味觉打造了一个纯白色的空间,让食物成为空间中唯一有色彩的元素,食物成为了“白色展厅”中的展品,让人们的注意力聚焦在食物上。与此同时,就餐空间大量引用自然光,不同时节、不同层次的光线形成了生动微妙的层次,让就餐氛围更贴近自然,回归食物的自然属性。
Taste laboratory has created a pure white space, making food the only colorful element in the space. Food has become an exhibit in the “White Exhibition Hall”. Peoples always focus on the food. At the same time, nature light at different times and seasons creates a live light space in the dining zones,which helps people find out the nature taste of the food.

项目的原始建筑物是一座外立面为中式风格的三层临街建筑,平面呈不规则梯形。考虑协调周边环境,对原建筑外立面的设计主要以修复+局部更新:在人视高度互动范围内,用与原墙体灰砖同色的玻璃砖,替换掉损坏的砖块,在白天呈现统一性,在夜晚玻璃砖的灯光亮起,又呈现出星光点点的引导照明效果。
On the site was a Chinese traditional style building with an irregular trapezoidal plan. For Improving the environment, we repair the facade with glass bricks replacing those broken ones. During the day, people can hardly find out the difference between the glass bricks and the original facade. At night, glass bricks will light up as stars.

设计在入口使用了一整面玻璃砖墙,使之与原建筑的灰砖立面产生传统与现代的碰撞,而玻璃砖墙围合出来的一个“黑空间“,成为室内的“白空间”与室外的“灰空间”的过渡,这种由黑到白的切换,搭配从室外繁复的原始立面到室内极简的空间切换,共同营造出一种“穿越”的时间感。同时,玻璃砖墙既遮挡了室外马路吵杂的环境,也保证了入口区域的采光。
Considering the interior space as the white space and the exterior as the black space. We use a whole wall of glass bricks to create a grey space, which communicate the in and out as a bridge. Meanwhile, a wall of glass bricks can keep away from the noise on the street but allow light to enter the building.

改造后的核心空间是一个贯穿3层的圆形塔状光井,光塔不仅将顶层的天光层层引入,同时也组织了各层平面动线,形成了或向心、或离心、或环绕的空间系统。每一片墙面,都用它独有的姿态承托光影,从而塑造出纯净而又富有个性的空间。中央水池区既是餐厅的核心景观,同时也是食客与服务人员流线的疏导中心。
A light tower from 1F to 3F designed in the center of the building, which considered as a communication center space for the lab. Walls are shapes of light. Middle pool creates a circular center.

利用房屋尽端式的异形空间,打造为饮品食实验室,或许下午茶也是一场“食尚会议”

二层围绕光井的中央空间作为多功能展厅/餐厅使用,营业以来已举办多场画展,为食客创造“在博物馆中用餐”的体验。

与桌面齐高的水平长窗,及保证了基本的采光,也遮挡了室外杂乱的交通环境。画框式的局部处理,使得用餐行为与展览行为获得一个微妙的“互观”关系。
The horizontal long windows at the same height of table ensure lighting and also block out the outdoor traffic environment. Dining space is designed as a frame.

由于房屋原有平面形态特殊,局部临窗的不同房间都有不同的形状。统一纯净的白色风格很好的包容了这些差异的同时,为光影留出了独特的舞台。

三层休闲区在整体白色基调上,加入质感更丰富的米色石砖,打破单一的色调和材质体验。
